Norma's Waz-Za Waffles

Jeremy and I visited California back in October and stayed with his sister and her husband. They took us to several wonderful restaurants, but to me, the best was at a hotel in Palm Springs with a restaurant called "Normas". Jeremy's sister, Jenessa, and her husband, Sam, had been to this place before, so we all agreed to get separate dishes, but when I decided on the "Waz-Za Waffles" they both said it was an excellent choice. When it came, I agreed....and everyone helped me eat a little bit!!! 





So...when we got back to GA, i was doing some research and saw that Norma's made a cookbook...I immediately ordered it. I got a waffle maker for Christmas and we were ready to make it.


Now...I enjoy cooking, but I am no chef!! We looked at this recipe and decided to take a few short cuts, for instance, it tells you how to make the waffle batter....Jeremy and I decided it would be much easier to just buy some waffle mix....MUCH easier, and it tasted just as good. 


The recipe is a 3 parter.....I will include the waffle batter recipe, but I wont tell anyone if you take the easy way out like I did!


We halved the recipe as it made 4 waffles and we certainly could not eat 2 of these per person....they are very filling. I will post the actual recipe though....halve or double as needed!

Raspberry Hollandaise (the stuff poured on top of the waffle, in the center of the bananas)

  • 4 eggs
  • Juice of 1 lemon
  • 1.5 cup clarified butter (see "how to make clarified butter") They say you can buy "Ghee" instead
  • 1 tbsp. granulated sugar
  • 1/4 cup raspberry puree (see "how to make raspberry puree") --some stores sell it, but not most commercial grocery stores, we made our own!


Blueberry topping (to pour over the top of the raspberry hollandaise)

  • 2 tbsp. butter
  • 1 tbsp sugar
  • 1 cup fresh blueberries   (we used blueberries, raspberries and blackberries)


Waffle Batter (or cheat like we did and just add the fruit to pre-packaged waffle mix)

  • 1/2 cup mango
  • 1/2 cup papaya
  • 3 cups all purpose flour
  • 1 tbsp baking soda
  • 1 tsp baking powder
  • 1/3 cup sugar
  • pinch of salt
  • 3 cups buttermilk
  • 1/3 cup of milk
  • 5 eggs
  • 1/3 cup clarified butter
  • 1/2 cup blueberries
  • 1/2 cup raspberries


Extra things you need that they fail to tell you in the ingredients:

  • 4 bananas
  • brown crystallized sugar (not much, maybe 1-2 tbsp)
  • A food torch or broiler



Instructions:
Raspberry hollandaise:
1. separate egg yolks from whites - discard whites
2. in double boiler - whisk egg yolks, sugar and lemon juice until light in color and thick in consistency, continue to whisk w/o stopping.
3. add clarified butter in slow and steady stream until incorporated.
4. add raspberry puree, mix well.

 Blueberry Topping:
1. heat butter over medium heat until melted
2. add sugar and dissolve
3. toss berries in sugar and butter until coated


Waffle Batter: (If using pre-mixed waffle mix, only follow steps in RED)
1. Peel and dice the mango and papaya
2. In large bowl, mix flour, baking powder, baking soda, sugar and salt.
3. In separate bowl, mix well shaken buttermilk, milk and eggs
4. with a spatula, slowly fold butter milk mixture into dry ingredients until incorporated.
5. slowly mix in the clarified butter
6. fold in blueberries, raspberries, mango, papaya
7. cook in waffle iron for 3-4 minutes


To assemble:
-Slice 4 bananas on an angle
- Surround top of waffle with bananas
- Pour 1/4 (1/2 if you only made 2) of the raspberry hollandaise on top, in the center of the bananas
-Cover raspberry hollandaise with brown crystallized sugar and with a food safe torch caramelize until bubbly (brulee). If no torch, place under broiler for a minute.
- Spoon on blueberry topping


- ENJOY!! We did!!!
